Puran Poli is always the best dish and everyone's favorite when it comes to making sweet dhod dish on any festival day or any happy moment.
Everyone thinks that puran poli is a very difficult dish, it takes a lot of time to make this dish
But in fact, Puran Poli is a quick-cooking dish with ingredients that are easily available at home.
Another feature of Puran Poli is that Puran Poli is widely used as a sweet dish to heal God. Puran Poli Naivaidya is shown especially during Holi, Nag Panchami, Akshayatritiya, Gudi Padwa.
Puran polli is known as a special dish in the festival of Maharashtra.
Puranpoli is not only famous in Maharashtra but it is also made in places like Gujarat, Kerala etc. As the country is called Culture, there is a difference in the method of making puran poli in the village in each country.
Chana dal is the main food here, but in some places, toor dal is used for puran instead
In some places they make puran poli only of flour, in some places they make only puran poli of wheat flour, and in some places they make poli by combining both.

For my dada [my father], festivals were an excuse, but he could never stop the temptation of Puran Poli.
Everyone eats puran poli with curd, milk, ghee as per their choice.
My mother always makes a little extra puran so that the next day I can make hot puran polii and drizzle it with ghee for a delicious breakfast.
In many places it is customary to serve flour-filled poli to the naivadiya as this poli is very fluffy and tastes very delicious.
Some places don't like maida puran poli because they make puran poli with only flour, while others make puran poli with flour/wheat flour as flour is too thick to digest.
And I love Puran Polya which is a mixture of both flour and wheat flour.

Preparation time : 2 hours
Time required to cook Puran : 1 hour
Materials required for Puran Poli
For Puran Poli Dough / Dough:
2 cups wheat flour
1 cup flour
1 to 1 ½ cups of water
2 to 3 tbsp oil
Salt to taste
Materials required for filling
1 cup gram dal
1 cup jaggery
1/2 tsp cardamom powder
1 tbsp ghee
Procedure for making Puran:
Steps to make Puran:
1] Wash gram dal and soak it for 2 to 3 hours by adding 2-3 cups of water.
2] Now put the dal in the cooker and add water for 3 whistles, keep the gas on low-medium flame.
3] After the cooker cools down, remove the excess water with the help of a strainer, we can use that water to make cuta amti [that gives delicious taste to cuta amti].
4] Now grind the dal well in the mixer, till then grind the jaggery on the side and grind it well.
5] Take a kadai put this ground dal in it and add jaggery in equal quantity [ decide according to how sweet you want it ]
Add ghee and cardamom powder and mix well.
Keep the gas on a low flame till the mixture of jaggery and dal comes together and be careful not to burn the pan.

Recipe for making dough:
Dough Preparation:
1] Take wheat flour and maida flour in a pan/plate, add salt to taste.
2] The amount of wheat flour and flour can be varied according to your taste, mix both together well and mix well with little oil.
3] Add little water at a time to soften the dough properly, if necessary add little water and knead the dough well.
4] Keep the dough thin and soft, keep kneading until the dough does not stick to your hands
5] Put the dough in a bowl and keep it for an hour with a clean cloth on it
6] Make balls of the dough, smaller than the ones used for chapatis
7] Take some oil in a bowl and keep the dough balls in it for 5-10 minutes
8] Take a ball of puran bigger than the dough ball and drop it into the dough ball
9] Heat a tawa on low flame, when the tawa is hot, place puran poli on it, roll each puran poli very thinly.

10] After roasting on one side, change the side of the poli, leave some ghee on the edge
11] Flip the side of the honeycomb again and apply ghee on it
